A Recipe For Roasted Sweet Spiced Nuts

This is a recipe I have returned to again and again over the last few years. Roasting nuts is quick and easy to do; they make an excellent snack and an even more wonderful homemade gift, especially during the festive holidays. You can use whatever nuts, herbs, and spices you have to hand.

The following recipe is sweet and spicy with cinnamon, nutmeg, and a kick of cayenne pepper. You can make a more savory version by subbing the maple for more oil and using herbs like rosemary and thyme. Both are delicious, although my favourite is the seasonal spiced version.

These roasted nuts can be eaten as a snack, or chopped to use in salads or top soups. Almost any combination of nuts will work: walnuts, hazelnuts, pecans, even cashews and peanuts. You can also throw in seeds, like pumpkin or sunflower, and throw in some dried fruit after roasting for extra sweetness.



INGREDIENTS

250g mixed nuts
2 tbsp olive oil
2 tbsp maple syrup, or agave
1 tsp cinnamon, ground
1/2 tsp nutmeg, ground
1/2 tsp cayenne pepper
1/2 tsp sea salt



INSTRUCTIONS

Heat the oven to 170C/Gas 4.

In a small jug, mix the spices into the olive oil.

In a larger bowl, pour the oil over the nuts and stir until thoroughly coated.

Stir in 1 tbsp of maple syrup.

Spread the nuts over a baking tray - use a reusable baking mat if you have one.

Place in the over to cook for 10 minutes.

Remove the pan, drizzle over the remaining maple syrup, and return to the oven to cook for another 10 minutes. Keep an eye on them to prevent burning.

Once the nuts are golden brown, remove and allow to cool completely before transferring to a jar.
